大麥水barley water, 《本草綱目》記載:「大麥味甘、性平、有去食療脹、消積進食、平胃止渴、消暑除熱、益氣調中、寬胸大氣、補虛劣、壯血脈、益顏色、實五臟、化穀食之功。 治小便淋痛;治麥芒入目;治老人煩渴不止、飲水不定、舌卷干焦;治水氣病;夏季清暑熱;治急性咽喉炎、扁桃體炎、咽喉部膿腫。

在家自己煮大麥水barley water(大麥茶)步驟如下: 

1.買回來得大麥,沖洗後浸泡四小時,濾掉浸泡的水,一杯泡過的大麥加上3-4杯水的比例,煮沸後,關火燜燒約45分~1小時。
2.讓大麥自然沉澱於鍋底。將過濾或打撈讓麥、水分離,大麥水放冰箱的話,煮一次約可以放三天。
3.過濾起來的大麥,可以煮濃湯或用果汁打成大麥漿或冰沙飲料。
4.每天喝1至2杯大麥水,可以保持身體健康,有助於清潔腎臟,針對泌尿系統炎症發生時,有良好抗炎作用。
在國外的自然療癒領域中,對於有泌尿系統問題,如膀胱炎,腎結石和高肌酐水平...等,治療師建議每天可以多喝幾杯大麥水(如2-4杯),直到擺脫問題。
若覺得需要增加一些口感刺激的人,可以添加一些蜂蜜或檸檬汁來調味。

小編自己到超市,有機市場上,幾乎買不到barley全麥。基本上,Pearl barley是脫殼,脫的比較多,顏色上會比較白析些,然最好的barley還是全麥,帶殼或是脫殼較沒那麼徹底的,比較能夠保留它的纖維質與較多的營養價值。這就如同我們的主食,有稻>>糙米>>白米的差別。脫殼脫的白皙晶瑩的白米,在營養價值上除了澱粉,大部分的纖維跟營養都被脫掉了。
另外,針對孕婦或是哺乳期媽媽,「大麥水」是用【生麥芽】煮的茶湯,跟一般認知的「大麥茶」是經過煎炒的【炒麥芽】在中醫藥理上是有不一樣的特性,【炒麥芽】有退奶消脹的特性。於是購買時還是要注意,在營養價值上
